Let’s pretend this blog is a book, a book where we can assign a whole chapter to talk about the many ways to eat toast.

Perhaps I talk too often about comfort foods, but there’s no doubt that toast is on the top of my list as one of my favorite things to eat.

Both of my boys went through a stage in their childhood where they would eat toast almost every day. Sometimes they ate toast for breakfast, lunch and dinner.

You see, toast is not complicated; all it requires is a bit of butter. Then you take that first bite and all is good in the world. Just like that.

However, if you want to dress up your toast, here are a few ideas:

1.  Try toast with Orange Mascarpone Spread and top it with a few slices of strawberries

2.  How about toast with Membrillo and cream cheese?

3.  What if we slice some three-month-old Manchego Cheese with Almond butter and a drizzle of honey on our toast?

My notes:  To make the orange mascarpone spread, combine 8 ounces mascarpone + 1/4 cup confectioners’ sugar + 1 tablespoon orange zest and two tablespoons orange juice.  Mix well and that’s it. Store covered in your fridge up to one week. This spread is great on your bagel, toast, or crackers.
