Making oven roasted vegetables is the easiest thing but I wanted to share with you another simple recipe and show you the many different things you can do with this recipe.
I use it for my vegetable cheese panini (see recipe), you can add it to pizzas as well as pasta, vegetable lasagna or just eat it with brown rice or as a side dish.
Serves 6
- 4 small zuchini
- 8 ounces clean white mushrooms
- 1 red onion
- 12 ounces asparagus
- 1 medium eggplant
- 1 orange bell pepper
- 1 teaspoon minced garlic
- 2 tablespoon olive oil
- 1 teaspoon salt
- 3/4 teaspoon ground pepper
Pre-heat oven to 450 degrees and cut vegetables about the same size. Line baking sheet with aluminum foil and arrange vegetables on a baking sheet. add salt, ground pepper, garlic and oil. Toss to coat.
Place vegetables in oven and bake 25 to 30 minutes or until vegetables are tender and slightly charred.
