What to do when you get totally carried away and buy too many pineapples and too many pomegranates?
You can bake a pineapple upside down cake, pineapple preserves and with the pomegranate you can make your own pomegranate glaze. However, since I couldn’t wait to eat both things together, I simply made a salad with the ingredients I had on hand.
I had simple syrup in the fridge. (You can find the recipe here). I used a few tablespoons of the syrup and then combined the cut pineapple with the pomegranate seeds. And there it was: a beautiful salad for breakfast, lunch, or a late snack. Enjoy!
