I always  love to shop at health food markets.  My favorite was Wild Oats in North Scottsdale, AZ; but a couple of years ago they went out of business.  They had the best Spelt Muffins.  The following recipe is pretty close to those muffins I used to love, the only difference is the size of the muffins.  The muffins from Wild Oats were three times as big as these muffins.

These muffins are great for breakfast, with coffee or just when you want to something a little sweet to eat and healthy at the same time.

Makes 10 muffins

Ingredients

  • 4 tablespoons olive oil
  • 2/3 cup brown sugar
  • 1/3 cup natural applesauce
  • 2 eggs
  • 1/2 cup clementine juice
  • 2 teaspoons vanilla extract
  • 2 cups spelt flour
  • 2 teaspoon baking powder
  • 1 teaspoon grated clementine zest
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh blueberries

Preheat oven to 350 degrees.  Line muffin tin with paper muffin liners.  In a large bowl mix oil and sugar.  Stir eggs, applesauce, clementine juice and vanilla.

In a second bowl mix together flour, baking powder, salt and zest.  Stir flour mixture into wet mixture until combined.  Gently add blueberries.  Spoon batter into muffin cups and bake about 30 minutes.
