I guess I can say I have a lot of explaining to do.
Where have I been these past couple of weeks? Did I take a long holiday here?
Maybe I just got tired of cooking and sharing with you and gave up blogging after less than two years?
Or maybe this or this showed up to do their thing in my body without prior notice.
None of the above, friends.
You see, right after Thanksgiving without much thinking, we found a little house near our other house and fell in love with it. So, we bought it! And for the last month and a half we’ve been packing, moving, unpacking–as well as doing all of the other things one does when buying a new home.
Let me tell you, we’ve never visited Lowe’s and Home Depot as much as we have recently.
We are tired but so happy to be home. And, most importantly we are so blessed and grateful that we found this beautiful house. It is a home to enjoy with our friends and family.
Moving day was just last Friday.
Here’s a picture of one side of the kitchen as it looked the first couple of days.
In my effort to stay away from unhealthy take-out and fast food, I thought the best choice was to make this super tasty and scrumptious sandwich. There’s no cooking required and best of all, it’s meatless.
To make it, you’ll need:
- 2 slices multi-grain bread or fruit bread
- Softened cream cheese
- Honey
- Shredded carrots
- Alfalfa sprouts
Spread 1 slice bread with cream cheese and drizzle honey. Top with carrot and alfalfa sprouts. Top with another slice bread and cut in half.
