The next time you find yourself with a few avocados and fresh corn, this recipe is the perfect fit for those informal gatherings with friends and family.
I’m having a get together, but it’s just me and this beautiful creamy avocado. Yes, we are totally getting together. I’ve also asked a few flour tortillas to join us.
The sweetness of the sweet corn works well with the mildly spiced creamy avocado.
You can also serve this with crispy wontons or corn tortillas. Add some cold drinks, and that’s all you need to start a big bash; okay, maybe not exactly a big bash, but you know what I mean. Enjoy!
Creamy Avocado with Corn
Ingredients:
- 1 large avocado, diced
- Juice of 1/2 lime
- 1/2 cup red onion, finely diced
- 1/2 jalapeño, seeded and finely diced
- 1 tablespoon cilantro, finely chopped
- 1 clove garlic, minced
- 1 tablespoon Greek yogurt
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 cup fresh corn kernels, grilled or roasted (about 1 large ear)
In a large bowl mash avocado with a fork and combine with lime juice, red onion, jalapeño, cilantro, garlic and yogurt. Mix well. Add salt and pepper and scoop into a serving dish. Top with grilled or roasted corn. Serve with tortillas chips or wonton crisps.
