This is my version of a low fat granola without nuts. But I have to confess. I totally burned the first batch… it was a total disaster…
I was in the middle of a project in front my computer and I knew I had the granola in the oven… but I just got distracted and by the time I made it to the kitchen my beautiful granola turned into toxic waste.
I know what you are thinking… “how can I get granola wrong? it’s so simple to make” I don’t know… It was a combination of not being very good at multi-tasking and a super hot oven.
The only good thing was that the house smelled really great… don’t ask me why but it really smelled like fresh baked cookies… So here’s the second attempt and it turned out great.
You really can make this with any dried fruit and nuts… I just use the ingredients I always have in my pantry and of course no nuts just in case Cameron decides to try it.
Mixed Dried Fruit Granola
Ingredients
- 2 cups oats
- 1/3 cup diced dried apricots,
- 1/4 cup diced dates
- 1/2 cup diced dried cranberries
- 1/8 cup diced candied ginger
- 1/2 teaspoon vanilla
- 1/4 cup honey
- 3 tablespoon melted butter
Melt the butter in a small bowl in the microwave; stir in the honey and vanilla and drizzle on top of the oats. Bake at 250° for 20 to 25 minutes or until golden brown, stirring a couple of times. Cool. Stir in dried fruit.
