I know how hard mornings can be: getting ready for work, making breakfast, and getting our kids to school on time. It can seem like an impossible challenge to fix something like fresh muffins for breakfast.

But, with a little advance planning, perhaps you can. Have your muffin tins ready with muffin liners the night before. You can even set out some of the non-perishable ingredients on your counter tops.

It takes 10 minutes or less to put together this batter. Set the timer on your oven to 25 minutes. And then bake the muffins while you get ready.

By now you are probably thinking that I’m insane, that this idea is crazy. Before you dismiss it altogether, try making them on a quiet Sunday morning when you aren’t rushed. You’ll see it really takes no time to make them, and they turn out beautifully.

This muffin recipe is made with Greek yogurt, olive oil, flour, vanilla, and a few secret ingredients. Once the batter is ready to go into the cups, you can add anything to the center of the muffin. Think about adding chocolate chips, white chocolate chunks, dried cherries, blueberries, or your favorite jam.

Those surprises will make the muffins fun to eat because no one at the table will know what they are getting until they take their first bite. Enjoy!

Sweet Surprise Muffins

 

 Ingredients:

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup sugar
  • 1/8 teaspoon salt
  • 1 cup Greek yogurt
  • 1/3 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/3 cup olive oil

 

Surprise Ingredients:  You’ll also need chocolate chips, white chocolate chunks, sweetened coconut, dried berries, peanut butter chips or your favorite jams that you may want to add to the center of the muffins. 

Adjust oven rack to middle position and heat oven to 350°F.  Line a muffin tin with 12 muffin liners.

Whisk flour, baking powder, sugar and salt in a bowl. Beat yogurt, milk, eggs, vanilla extract and oil in a separate bowl.   Add the dry ingredients with the wet and mix until just combined.  Mixture will be thick.

Fill muffin cups half way with batter (about 1 heaping tablespoon batter).  Drop about 1 teaspoon of your surprise ingredient into each muffin and top with the remaining batter (about 1 heaping tablespoon).

Bake muffins for 25 minutes.
