I guess you can call it poor planning, but I almost forgot to post these beautiful brigadeiros to celebrate the World Cup.
These were made with Belgium white chocolate with green and yellow sprinkles, of course.

White Chocolate Brigadeiros
Ingredients:
- 1 14-oz can sweetened condensed milk
- 2 tablespoons heavy cream
- 2 tablespoons unsalted butter
- 1 tablespoon light corn syrup
- 1 1/4 cup Belgium White Chocolate, chopped
- 1/4 cup yellow sprinkles
- 1/4 cup green sprinkles
You’ll also need mini paper or foil candy cups.
Combine condensed milk, heavy cream, butter, corn syrup in a medium-heavy saucepan. Place the pan over medium heat and stir until the butter dissolves. Bring to a boil over medium heat. Reduce heat to low, add chocolate and keep stirring until the candy comes together in one piece, about 8 to 10 minutes. When mixture is ready, it will pull together into one soft piece.
Pour mixture into a bowl. (don’t scrape the pan; leave any residue behind) Let cool to room temperature, then cover and refrigerate until very firm and completely chilled, at least 4 hours or overnight.
When the candy is chilled and firm, use a teaspoon to form the candy into small balls about 1 inch in diameter. Roll each ball in sprinkles until evenly coated. Place the Brigadeiros into mini paper or foil candy cups to serve.
