When I was a kid, one of the schools I went to had a mid-morning recess. At recess we all ran to the snack bar to get a treat and eat before we had to go back to class. My parents gave me money every morning for snacks, but it wasn’t very much.
So I saved my coins every day for a couple of weeks until I had just enough money to buy a grilled cheese sandwich with a papaya smoothie from a small coffee shop near our house. I tell you, I had a feast.
The name of the coffee shop was Xiomy’s.
To this day, the nutty melted cheese with tomatoes and the crunchy bread are one of my favorite memories of my childhood.
So here’s my version of that grilled cheese. Enjoy!
You’ll need:
- Bread (I’m using ciabatta)
- Manchego Cheese, cut into 1/4-inch slices
- Guava Pasta, cut into 1/4-inch slices *
- Butter (optional)
Brush the outside of the split ciabatta with butter, fill with 1 or 2 slices of cheese on top and guava paste. Place the remaining bread on top. Cook sandwiches on panini press or skillet until bread is golden and cheese is melted.
