For lunch we had chicken sandwiches with pesto and mozzarella cheese. Instead of chips we had fruit on the side… It was perfect. We roasted a chicken the night before and had leftovers.
Thank God for leftovers. I love leftovers that you can just take out of the fridge and make it into something else. Enjoy!
To make this you’ll need:
- Ciabatta rolls or any rolls you like
- Shredded chicken breast
- Sliced Mozzarella cheese
- Basil pesto
Brush the inside of the split ciabatta with pesto, fill with 1 or 2 slices of cheese on top and chicken. Place the remaining bread on top. Cook sandwiches on panini press or skillet until bread is golden and cheese is melted.
