I recently added a new category to this blog called Fried Dough.
It seems like almost every country has some kind of sweet or savory recipe with flour and a few other things that ended up in the fryer, only to become a scrumptious treat.
I realize that this may not be something we can eat every day–perhaps not even once a month–but I believe that, once in a while, it won’t hurt us to make and eat some kind of fried dough. Enjoy!
Ricotta Fritters with Chocolate
Ingredients:
- 1/2 lb fresh ricotta cheese
- 1 3/4 cup all purpose flour
- 3 eggs
- 1/4 cup sugar
- 2 teaspoon baking powder
- 1 tablespoon orange zest
- 1/8 teaspoon salt
- 1/2 cup chocolate chips
- Vegetable oil for frying
- Confectioners sugar (optional)
In a large bowl stir together the ricotta, flour, eggs, sugar, baking powder, orange zest and salt.
Mix well. Gently add in the chocolate chips.
Heat 1 1/2 inches oil in a large heavy saucepan and bring to a temperature between 350°F and 360°F. Add batter to hot oil in small batches (don’t overcrowd). Fry until golden brown on both sides, about 3 to 4 minutes. Remove from oil using a slotted spoon and drain on paper towels. Serve warm and sprinkle with confectioners sugar.
Yield: 30 to 40 fritters
