Shrimp with Jamaican jerk seasoning… that’s sounds yummy… but shrimp taste great with anything, right? Okay… I know what you are thinking. This is not a shrimp recipe… so you must be wondering if I’ve lost my mind or went crazy overnight.
No… that’s not the case. I found this jerk shrimp recipe and it looked so easy that I had to try it with chicken instead of shrimp.
Every time I hear jerk seasoning I think that if I eat it I may end up drinking all the water in the state of Arizona but that was not the case with this recipe. The chicken was very tasty and not spicy at all.
I cooked it in an electric indoor grill… and in less than 30 minutes we were eating. Very simple. I served it with rice and a heirloom baby tomato salad. But you can pretty much serve it with anything you like. I think you’ll really enjoy this one.

Serves 4
- 1 tablespoon sugar
- 1 tablespoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground thyme
- 3 tablespoons olive oil
- 3 boneless, skinless chicken breast halves
Prepare grill to medium-high heat. Combine first 7 ingredients.
Take each breast and pound to an even thickness. Combine oil and chicken in a large bowl; toss well to coat. Sprinkle spice mixture over chicken; toss to coat.
Place chicken breast on a grill rack coated with cooking spray; grill 8 minutes or until done, turning once.
