Apricot-White Chocolate Muffins


Yesterday we made these scrumptious muffins.  What a great morning or afternoon treat!  Enjoy!

 

Adapted from Love Food’s Step-by-Step Baking

 

Makes 12 Muffins

Ingredients:

 

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup superfine sugar
  • 1/2 cup dried apricots, chopped
  • 1 cup white chocolate, chopped
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 1/2 cup olive oil

 

Preheat the oven to 400 degrees.  Place paper muffin liners in a muffin pan.  Sift the flour and baking powder into a bowl and stir in the sugar, apricots and chocolate.

 

Beat together the eggs, buttermilk and oil, then add to the flour mixture and mix evenly.

Spoon the mixture into the muffins lines and bake in the preheated oven for 20 to 25 minutes, until well risen.  Serve muffins warm.
