Midnight Cake


Remember the wacky cake we made about six months ago with no butter or eggs?  Well, here is a similar cake.

A cake that requires very few ingredients and one extremely unusual one.  Mayonnaise.

Yes, there’s no butter, no eggs and no milk.  And the result is a scrumptious cake that has all the flavor of a complicated cake and yet only takes a few minutes to put together.  Not too sweet, just the perfect formula.

Did I mention that you don’t even need to use a mixer? Yes, no electric gadgets required.  Just mix it by hand and in a few minutes your batter is ready to go into the oven.

This emergency cake is called Midnight Cake but what it really should be called is Miracle Chocolate Cake.  Enjoy!

 

Midnight Cake

Recipe from Cook’s Country

 

Ingredients:

 

  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder*
  • 2 teaspoon baking soda
  • 1 cup mayonnaise
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup water

*Avoid using Dutch-processed cocoa powder

 

Pre-heat oven to 350° F.  Grease a 13- by 9-inch baking pan, line the bottom with parchment paper.

Mix flour, cocoa and baking soda.  In a separate bowl whisk mayonnaise, sugar and vanilla.  Add flour mixture into mayonnaise mixture in 3 additions alternating with the water, until combined.

 

Pour batter into prepared pan and bake until cake tester or toothpick inserted in the center comes out with a few crumbs attached, about 25 minutes.  Remove from oven and cool on wire rack.
