Oh, the conveniences of the modern age!
Canned food, TV dinners, instant mashed potatoes, cake mix and my personal favorite, the pancake mix.
These were great inventions. Some of them we love, and some of them make us scratch our heads.
Yes, pancake mix is my favorite because I love the idea of having a box around for one of those nights when we forgot to eat because we were too busy working or because we felt like eating breakfast for dinner.
It’s so much easier to open a box, add a few ingredients, and voilà! We’ve made a delicious breakfast or dinner.
Pancakes are a great comfort food any time of the day, with or without maple syrup, topped with fruit, or just plain.
Today we’re making our own pancake mix. Yes, you heard right. This is a mix with a few ingredients that you can make ahead and store in an airtight container.
I love this recipe because the older I get, the more I want to know what’s in the food I’m eating and feeding to my family. And this homemade mix is super simple and delicious, something that will be waiting for you on your pantry shelf when you need it. Enjoy!
Pancake Mix
Ingredients:
- 3 cups all-purpose flour
- 1 cup whole wheat flour
- 2 tablespoons baking powder
- 3 tablespoons sugar
- 2 teaspoons baking soda
- 1 teaspoon kosher salt
Combine all of the ingredients in a large bowl. Mix well and store in a lidded container at room temperature.
Use within 6 months
