Spinach and Ricotta Fritters

Remember the old cartoons of Popeye the Sailor Man with his magical spinach,

and how eating it transformed him into a super strong hero? It made almost

every kid I knew want to eat their spinach.

 

Well, these tiny fritters are not exactly like that…they’re better.

 

If you like cheese and spinach, you will love these fritters.  And even if

you don’t like spinach, I’m confident you will like these fritters too.

 

You can make these with either fresh or frozen (just squeeze out all the

water) spinach. Add ricotta cheese, eggs, plus a few other ingredients and

in less than 30 minutes, you’ll have a tasty snack.

 

These fritters might even make the kids want to eat their spinach.

 

Ingredients:

  • 1 cup spinach leaves, wilted and chopped or frozen spinach, thawed and drained
  • 1 cup fresh ricotta cheese
  • 1/2 cup finely grated parmesan
  • 1/3 cup all purpose flour
  • 1 egg + 1 egg yolk
  • 1/2 cup chives, chopped
  • 1 clove garlic, crushed
  • 2 tablespoons butter
  • Salt and pepper to taste

 

In a medium bowl combine the spinach, ricotta, parmesan, flour, eggs, chives, garlic, salt and pepper.  Mix until sticky dough forms.  Form dumplings by hand or using a 1/4 cup measure, flatten slightly.

Melt the butter in a non-stick pan over medium heat.  Add the dumplings and cook for 2 minutes on each side. Serve with extra parmesan.
