Since white chocolate and mascarpone cheese are my two new favorite ingredients I decided to combine the two and make this frosting. Enjoy and have a happy Easter!
- 1 (12-ounce) package premium white chocolate chips
- 2 – 8 oz. each mascarpone cheese
- 2 tablespoon unsalted butter
- 1/2 teaspoon vanilla extract
Place chocolate in a 1-quart glass measure. Microwave at high 1 1/2 minutes or until chocolate melts, stirring every 30 seconds. In a mixing bowl, beat the mascarpone cheese with a flat beater until smooth and creamy. Add the white chocolate until blended and smooth. Beat in butter and vanilla extract. Refrigerate until firm enough to frost the cupcakes.
