Remember when we shared our go pancake mix recipe? Well, you can use it in the recipe I’m about to give you.
You can’t go wrong with zucchini, cheese and a little pancake mix.
Zucchini is for sure an ingredient that has been featured here a lot. Maybe because it’s easy to find, inexpensive and allows us to forget about them in the fridge for a few days. It’s also great to cook. I think of it as the forgiving vegetable. Or maybe it’s just because we love zucchinis.
We love anything that we can warm up in minutes for a delicious dinner or lunch. Anyone can make this with very little effort and time. Enjoy!
