This recipe reminds me of my son Cameron, when he was about 5 years old he would eat pasta with butter all the time.
For lunch today, we made spaghetti with parsley and parmesan.
You can also make this recipe with just olive oil or maybe just with butter, with or without the cheese and it will be just as good. Enjoy!
Serves 4
Ingredients:
- 1 pound dried spaghetti
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 tablespoons chopped fresh flat-leaf parsley
- 1 tablespoons minced garlic
- 8 ounces Parmesan cheese, grated
- salt
Cook pasta in a large pan of boiling salted water for 10-12 minutes, or until tender but still firm to the bite. Drain and transfer to a serving bowl.
In a medium saucepan add butter, olive oil and garlic and cook over low heat. Cook until the garlic softens. Add parsley and half the Parmesan cheese. Remove from heat and add to pasta and mix well using two forks. Sprinkle with the remaining Parmesan cheese and serve.
